Raw Spinach and Pickled Egg Salad

Wash the spinach, drain and break into bite-sized pieces. Lightly toss with the onion rings. Combine the lemon juice, oil, salt and pepper and shake to mix. Set aside until just before serving. Garnish the salad with the pickled eggs. Drizzle the entire salad with the dressing and serve.

Pickled Eggs / Kiszone Jajka

Combine the beet juice, sugar and vinegar and stir until dissolved and blended. Place peeled eggs in mixture, being sure the eggs are entirely covered with the juices. Allow to marinate overnight.
